Homemade, One Bowl Carrot Cake

There is no better time to bake and serve a delicious, moist carrot cake then Easter! Not only is this popular cake an Easter favorite, it can also be extra hard to resist with its smooth, cream cheese frosting. This is the perfect dessert to serve to a crowd over Easter dinner or you can even make a smaller version and bake carrot cake muffins for an on the go treat! The best part is you’ll only need one bowl, an oven and some basic baking ingredients to complete this fun dessert. Check out the recipe below to learn how to whip up your own homemade carrot cake and impress your guests this year:

 

Ingredients Needed:

  • 4 Eggs
  • 3 Cups Of Carrot (Grated)
  • 1 1/4 Of Olive Oil
  • 1 1/2 Cups Of Sugar
  • 1 Teaspoons Of Vanilla
  • 2 Cups Of Flour
  • 2 Teaspoons Of Baking Soda
  • 2 Teaspoons Of Baking Powder
  • 2 1/2 Teaspoons Of Cinnamon
  • Dash Of Salt

Cream Cheese Icing:

  • 1/2 Cup Of Butter
  • 8 Ounces Of Cream Cheese
  • 4 Cups Of Icing Sugar
  • 1 Teaspoon Of Vanilla

 

Instructions:

  1. Start by preheating your oven to 350°. While the oven pre heats, grease your chosen cake or muffin pan and set aside.
  2. In a large bowl, cream together all wet ingredients except the carrots. Once mixed, add in all dry ingredients to the same bowl and mix together well.  Once everything is combined, add in carrots and stir.
  3. Pour your batter into the pre greased pan of your choice. Bake in the oven for 40-55 minutes or until the cake starts to look golden brown.  Test the cake’s doneness by inserting a toothpick directly in the middle, if it comes out clean your cake is done! Let the cake cool in the pan before removing.
  4. While your cake is cooling, you can get started on creating the frosting! Simply take all listed  ingredients, combine in a large bowl and beat until smooth. Once smooth, let your icing sit until your cake is ready to be iced. Ice your cake or muffins as you please and feel free to top with sprinkles, nuts or some colorful Easter candy!
